Tahini Sauce for Salad - Vahchef

Ingredients: Lemon juice 3 Tablespoons Chopped garlic 1 Tablespoons Salt To Taste Sesame seeds 1 Cup Olive oil 3 Tablespoons Directions: 1. Raw Sesame seeds, salt, water, chopped garlic, lemon juice all of them together make a fine paste in blender, add olive oil mix it well.

Salad dressing

MExican Salad


For Dressing: 2 tbsp extra virgin olive oil fresh coriander leaves - roughly chopped 3 cloves of garlic - finely minced 2 tsp dried oregano 3 tbsp lemon juice 3/4th tsp cumin powder 1/4 tsp chilli flakes For Salad: 200 gms lettuce tomatoes - chopped corn 1/2 cup kidney beans - boiled 1 avocado spring onion

Protein Salad

1 cup Tata Sampann Kala Chana
¾ cup green moong
200 grams cottage cheese (paneer), cut into small cubes
1 medium onion, finely chopped
1 medium tomato, finely chopped
2 tbsps freshly chopped coriander leaves + for garnish
¼ cup roasted skinless peanuts + for garnish
1 tbsp raw mango, chopped + for garnish
Black salt to taste
2 tsps roasted cumin powder
2-3 green chillies, chopped
¼ tsp black pepper powder
½ tsp chaat masala
1 lemon, cut into half

Stir Fried Vegetable Salad



Ingredients

1 tablespoon oil
1 tablespoon chopped garlic
6-7 button mushrooms, sliced
1-½   capsicum,
1 medium carrot, sliced
¼ medium cauliflower, separated into florets
6-8 French beans, diagonally sliced and blanched
100 grams tofu, cut into ½ inch cubes
Salt to taste
Crushed black peppercorns to taste
1 teaspoon red chilli flakes
½ tablespoon light soy sauce
1½ tablespoon sweet chilli sauce
Diagonally sliced spring onion greens for garnishing

Method

1. Heat oil in a non-stick wok. Add garlic and sauté for 30 seconds. Add mushrooms and sauté for 1-2 minutes.
2. Add capsicum and sauté for 1 minute. Add carrot and broccoli and sauté for 1 minute.
3. Add French beans and sauté for 30 seconds. Add salt, crushed peppercorns and chilli flakes and sauté for 30 seconds.
4. Add tofu and sauté for 30 seconds. Add soy sauce and sweet-chilli sauce and sauté for 1 minute.
5. Serve hot garnished with spring onion greens.

Aloo Paratha


2 Big Potato
1 Medium Onion
4 Green Chilli
1 tsp Grated Ginger

1/4 tsp  Cumin powder

1/4 tsp  Chilli Powder
1/4 tsp   Kashmiri chilli powder
1/4 tsp Turmeric Powder

 Use lemon Juice 

Coriander leaves 
(Dnt use Dry mango powder-one pinch |(opt) and kasuri methi)
2 pinch Garam Masala


Vahchef
200 grams  Chapati Atta
 3-4 Potato 
2 Tbsp  Cooking oil
1 Onion
.5 Tsp  Cumin powder
.5 Tsp Chat masala
4 Green chillies
.5 Tsp Lemon juice

Coriander leaves

Sambar

Cook 1/4 cup parippu with 1 cup water

Add vegtables and 1 cup water

Soak tamarind in 1/2 cup of water

2tsp sambar powder


Temper with ghee
Add garlic in tempering
and also sambar powder

Add onion with Dhal

Varuthu aracha kadala curry


Refer Swapnas currry world and Salu kitchen

Dont add Tomato (if adding dnt saute add to the ground paste )
Do not add perumjeerakam also  
Add Pinch of garam masala at hte end.


1 Cup chickpeas
1 Onion half cook with kadala (another half for thalikal)
 Green Chili
2-3 Garlic
1/2 Cup grated coconut
1/2 Tsp turmeric powder
1 tsp Kashmiri Chili Powder
1tsp  Chili Powder
1/2 tsp pepper
1.5 tsp  Coriander Powder
curry leaves
salt


Salu kitchen

Saute all powders seperately and grind with coconut.(Do not roast coconut  very dark)
Turmeric pepper,Chili powder ,Coriander powder
Pepper Powder,Garam masala ,roasted fenugreek powder


Cook kadala with salt and half onion .Wait for steam and cook for 5 whistles in low flame.

Heat 1 tsp oil and add fennel seed then add coconut and  fry till golden brown. (Do not roast coconut  very dark and also Immediately transfer to mixi.)

Saute all powders seperately and add to the thenga and powder it.Add powder to the cooked kadala and boil it .
Finally thalikal with onion and curry leaves.

Make batter
Add florets
Again add plain flour to the batter.

Put one by one florets to the oil.Otherwise it will stick to each other.

(Refer Madras Samayal)
Add chili sauce to the batter.
Chop the onion (Do not make big cubes)
Add very little soya sauce.
Add equal amount of chili sauce and ketchup.

Poori



1.5 cup Wheat floor
1.5 tbsp Rava (semolina)
Salt
Oil

Chicken fried rice

2cup Basmathi Rice (uncooked rice)
500grams chicken (4cup)  (cooked with pepper and salt)
6 cloves of garlic
1 Green chili(Big)
1/4 cup Onion Chopped
3 eggs
1 medium carrot
Half of Capsicum
1-1.5tsp Pepper Powder
1.5 tbsp Soya Sauce
2tbsp Vinegar
Salt as needed


USE NALLENNA
Make egg seperately and add to the rice.

Wash and soak rice for min 30mins.

Idiyappam



2 Cups Rice flour
3 Cups Water(or up to 3.5 - 4)
1.5 tsp Salt

Boil water and add powder altogether to the water 
stir well till the water dries up.
Keep for 15mins( veenas curry world)



There are 3 atchas...Always use middle one.

Amma's Ghee Rice


2 cup rice
4 cup water
Ghee 3tbsp

(3Cup rice - 4tbsp)
Soak rice for 10-20 mins


Heat ghee saute onion.
Add water and let it boil.
Add rice and boil again
Close the lid and wait for steam to come.
Sim and cook for 7 mins.
Open it add rest of the ghee and fried onion,cashews and raisins
Close and wait for another 5 mins to stir.

3/4 cup Green Peas (soaked for 8 hours)
1 3/4 water
