Mexican Rice


Ingredients

2-3 tbsp oil
2 cups of rice
3 cups vegetable stock
1 cups Tomatoes purée

1/2 large chopped capsicum
1/2 cup corn
1 cup Rajma kidney beans (boiled)

1 tsp cumin powder
1 tsp  black pepper
I tbsp red chilli flakes
1 tbsp oregano

1 tbsp lemon juice
6-7 sprigs of corriander
2 tsp salt

Tandoori Masala

Ingredients:

2 tbsp garam masala
2 tbsp ground cumin
1 tbsp coriander powder
4 tsp paprika (you can use Kashmiri Mirch)
2 tsp Kasuri Methi 
1 tsp turmeric
1/2 tsp red chili powder



Bake @200 for 10-12 minutes, turn the wings over and cook for another 10 minutes.

Soya Cutlet


1.5 Cups Soya chunks
1 Big Potato
1 medium Onion
1 tsp GG paste
3 green Chili
1tsp Lemon Juice

1/4 tsp turmeric powder
1 tsp Coriander powder
1/2tsp Pepper  Powder
1/2tsp Garam Masala

Make sure potato is well cooked.
Heat oil to high and then reduce the flame and then put the cutlets in oil
Keep the prepared cutlets in freezer for 15mins.
Use very less amount of oil while preparing the mixture.(it helps in bind the cutlets).
Dont keep the potato in water for long time.it will absorb more moisture and break the cutlet.
Add bread crumbs to absorb the extra moisture.

Butter Chicken Biryani

Ingredients:

Marination
½ kg Chicken
1 tbsp  Lemon juice
1 tbsp Green chili
2tsp Kashmir chili powder
½ tsp Turmeric powder
2 tsp gg paste
1/4 cup curd
Salt

Frying Chicken
2 tbsp Oil

Cooking Gravy  and Rice
3 tbsp butter
¼ Cup cooking oil
3 Green chilies
4 Cloves
1 Mace
2 Green cardamom
1 Cinnamon stick
2 Bay leaves
1 large Onion
3 Medium tomatoes (pureed)
1 tsp Coriander powder
1/2 tsp Turmeric powder
1.5 tsp Red chili powder
1 tsp  Salt
1/2 tbsp Ginger garlic paste
½ Cup Water
1 tsp kasuri methi
1/4 Cup Cream
¼ Cup  Onion fried
¼ Cup Mint leaves
¼ Cup Fresh coriander

2-2.5 cups Rice
1 Tbsp  milk(for colour)

Chicken Fry Recipe





500g Chicken
1 Egg
2 tsp Tbsp Ginger paste
2 tsp Tbsp Garlic paste
½ Tsp Turmeric Powder
1 Tbs Kashmiri Chilli Powder
2 Tbsp Vinegar (curd or lemon juice)
1/2 tsp Garam Masala Powder
1 tsp  Fennel Seeds
2 Tbsp Crushed Dry Red Chillies
1 tbsp Cornflour
1 Tbsp Rice Flour
Curry Leaves
Salt

Hakka Noodles


400g  Hakka Noodles
3 Eggs
1 Onions , thinly sliced
1 Cup  Carrots (30 secs on high flame )
1 Cup thinly sliced Cabbage  (15 secs on high flame )
1 Cup thinly sliced Capsicum(30 secs on high flame )
1/2 tsp  pepper powder
2 tablespoon Sunflower Oil
2tbsp Garlic chopped
2 tbsp Vinegar 
2 tbsp Soya Sauce 
2 teaspoon Red chilli Sauce 
1tsp sugar 
Salt , to taste



225g (7 1/2oz) dried or fresh egg noodles
1tbsp sesame oil, plus more to serve
1 1/2tbsp groundnut or vegetable oil
2-3 garlic cloves, chopped
50g (2oz) carrots, shredded
50g (2oz) mangetout, trimmed and shredded
3tbsp spring onions, finely chopped on the diagonal
1 red pepper, shredded
pinch sugar
2tsp light soy sauce
2tsp dark soy sauce
1tbsp rice wine or dry sherry

Kai Pola
2 big banana
3 egg
2tbsp milk
2.5tbsp sugar
1/2 tsp Cardmom
Pinch of salt
Use slove flame and cook for 20-30mins

Egg Mayo Sandwich



Ingredients
2 eggs, hard boiled and chopped
1 avocado, chopped
1 tomato, thinly chopped
2 tbsp mayonnaise 
1/3 Cup grated carrot 
1/4  Cup grated capsicum
1/4 Cup grated carrot
Pepper  to taste 
Salt to taste
Butter 

Directions
Mix chopped avocado and eggs.
Stir in the mayonnaise and combine well.
Season with salt and pepper and also rest of the vegetables 
Spread on bread slices with chopped tomatoes.

Idli batter recipe (Lekshmi Nair)


Grinder

4 Cup Idli Rice
1 Cup Urad dal(little extra or heaped 
.5 cup RiceFlakes(Aval) or .5cup saboodana
1tsp fenugreek seeds

Wash and soak Urad dal and fenugreek seeds in a bowl.
Wash and soak rice and rice flakes in a seperate bowl.
Soak for 4-5 hours.

Tips
Use soaked water of urad dal for grinding.

1.5 cup Urad dal 
3   cup Rice

2 Table spoon sugar
3/4 tsp salt

Wash and soak rice for 2-3 hours .Soak Rice flakes before 1 hour of grinding

Basmathi Rice

1 cup Rice 
2 cup water 
Salt 
Oil

WASH  and SOAK rice for 30mins .

Boil water in a pan.
At the same time saute half onion in ghee(oil).
Add rice and saute for 2mins 
Now add Boiled Water and sim for 15mins.

5 cup water 
Salt 
Oil

WASH  and SOAK rice for 30mins .

Add rice to boiling  water 
Drain rice once it is cooked well.
