Mexican Rice


Ingredients

2-3 tbsp oil
2 cups of rice
3 cups vegetable stock
1 cups Tomatoes purée

1/2 large chopped capsicum
1/2 cup corn
1 cup Rajma kidney beans (boiled)

1 tsp cumin powder
1 tsp  black pepper
I tbsp red chilli flakes
1 tbsp oregano

1 tbsp lemon juice
6-7 sprigs of corriander
2 tsp salt

800ml vellathil oru spoon ettu thilapiche Elam choodode 2 allel 3 thavanayayi kudikkam
